Today the Culinary Eden website has collected and recorded for you the most important tips and little culinary secrets, coupled with proven recipes that will definitely help even inexperienced housewives and tell you how to cook meatballs with gravy.

1. Without a doubt, the most common and popular meatballs can be called meatballs. Minced meat for them is prepared from one or two types of meat. Most often it is beef and pork. Of course, the easiest way to buy such minced meat is ready-made in the nearest store, but believe me, you can make it yourself homemade minced meat it will turn out much tastier and will meet your requirements much more fully. To prepare minced meatballs, you will need fresh, not too fatty meat. To ensure that your meatballs are truly tender, pass the meat through the finest grate of the meat grinder two to three times. Do not add eggs to the minced meat! Meatballs made from well-kneaded minced meat hold their shape perfectly even without them, but eggs will certainly add unnecessary hardness to your meatballs.

2. If you are going to cook meatballs in gravy, then you must add rice to the minced meat, which will help maintain the juiciness and tenderness of the meatballs themselves even after a long stew in the gravy. Round or medium-grain rice is best suited for making meatballs. There is no need to cook it even until half cooked, as is often recommended in recipes. It is much better to pour boiling water over thoroughly washed rice so that it completely covers the rice, leave for five minutes, and then rinse again in cold water. This kind of rice, just brewed with boiling water, perfectly retains all its absorbent qualities, which means it will preserve for you all the most delicious and aromatic juices that will be released from the minced meat during cooking.

3. In addition to rice and meat, fresh finely chopped onion must be added to the minced meatballs, and, if desired, garlic and coarsely grated carrots. All these vegetables will not only give your meatballs the necessary juiciness, but also add flavor and slight sweetness. To add a special flavor to your liking, you can add your favorite spices, such as ground black pepper, nutmeg, cloves, cardamom and many others. You can also add some finely chopped herbs - parsley, dill, cilantro, basil. All these additions will allow you to fully express your imagination and make your meatballs truly yours, a one-of-a-kind dish that you can be proud of.

4. Having prepared all the necessary ingredients, all you have to do is knead the minced meat and form meatballs from it. Doing this is easy and difficult at the same time. The whole point is that the minced meatballs must be kneaded thoroughly. After collecting and mixing all the minced meat ingredients, knead it for at least 10 - 15 minutes. Well-kneaded minced meat for meatballs should be dense, almost monolithic and in no case loose or crumbly. It is best to make meatballs with your hands slightly moistened in cool water. Just pinch off small pieces of minced meat and roll them into a ball the size of a small apricot.

5. Before you pour the gravy over your meatballs and leave them to simmer under the lid, they need to be fried. This will allow the meat to “set” and retain its original shape even after stewing for a long time. It is best to deep fry the meatballs. Pour enough vegetable oil into a deep frying pan so that the meatballs dropped into it are completely covered with it. Heat the oil over high heat and dip the meatballs in it for a couple of minutes until a light, uniform golden brown crust forms. Remove the meatballs with a slotted spoon and place on a separate plate. This method of frying will help you maintain the attractive round shape of the meatballs, and in addition, the boiling oil will instantly seal all the aromatic meat and vegetable juices inside your meatballs. If such high consumption oil is not included in your plans today, then you can simply fry the meatballs in a frying pan with a small amount of oil over medium heat for three to five minutes on each side. In this case, your meatballs will, of course, lose their round shape, but will remain just as tasty and aromatic. The choice of frying method is yours.

6. The gravy in which you will stew your meatballs not only gives them a special juiciness and softness, but also allows you to endlessly diversify the taste and aroma of the finished dish, because there are infinitely many recipes for various gravies. But there is one secret that unites them all - the gravy should be moderately thick. You can thicken the gravy with three ingredients: flour, tomato paste and sour cream or very heavy cream. These ingredients can be used individually or together to achieve the flavor you desire. Just follow the proven recipe you choose and everything will work out. However, avoid recipes that advise thickening the gravy with starch; believe me, such a paste-like gravy will only spoil your dish.

Bon appetit!

One of the most common dishes among European housewives is meatballs with gravy. The basis of this delicious delicacy is minced meat and fish.

Recipes:

Many novice housewives may confuse them with cutlets and zrazy, but there is a difference between them. In the process of cooking meatballs, more vegetable components are used, and various grains and spices are added.

I’ll tell you a secret: the more ingredients used when preparing a dish, the tastier it turns out. I present to you a few simple recipes their preparations.

It’s very easy to prepare a flavorful dish so that you can’t tear your household away from it later. The classic recipe for meatballs is based on minced pork.

To prepare you will need the following set of ingredients:

  • pork neck – 1 kg;
  • tomato paste – 4 tbsp. spoons (can be replaced with a liter of tomato juice);
  • 3 onions (medium);
  • round rice - 100 g (I take round);
  • garlic - medium head;
  • bay leaf – 2 pcs.;
  • allspice – 5 peas;
  • salt, black pepper;
  • paprika – 0.5 teaspoon;
  • ground ginger - a quarter teaspoon.

Cooking method:

I wash the pork several times in running water. Then I let it dry for a quarter of an hour, and after cutting it into slices, I grind it coarsely. I also pass peeled onions and garlic through a meat grinder. At the same time, boil the rice until half cooked, drain the excess liquid.

I add boiled rice and half the spices to the minced meat and mix everything well. I form the blanks with my hands dipped in water, medium in size. I fry them on both sides in a heated frying pan greased with sunflower oil. Then I put it in a deep pan.

At the same time I prepare the tomato sauce. I take a liter of boiled, cooled water and dissolve tomato paste in it. Then I pour this mixture into a frying pan, add the bay leaf and the remaining spices. Cook the sauce with the lid open for 10 minutes.

When the meatballs are overcooked and placed in a stewing container, pour hot sauce over them and cover with a lid. The cooking process takes 40 minutes.

How to properly cook meatballs with gravy in a frying pan - step-by-step recipe with rice

The taste of cooked food depends not only on the list of products used, but also on their quantity and method of stewing. So, for example, if you have very little meat, you can quickly simmer the meatballs directly in a frying pan.

Required Products:

  • minced pork or beef – 550 g;
  • round rice – 100 g;
  • carrots – 1 pc.;
  • chicken egg – 1 pc.;
  • onions – 1 onion
  • sour cream 15% – 100 g;

Cooking process:

I peeled the vegetables and washed them thoroughly. Then I grated the carrots on a coarse grater and chopped the onion. Boil the rice until almost done.

I prefer to use fresh minced meat to prepare these little ones, but this time I had some frozen leftover. I added an egg, boiled rice and spices to taste to the defrosted meat. I mixed everything thoroughly.

I formed small balls and put them in the freezer for a short time so that they set and hold their shape better.

I fried the vegetables literally lightly in vegetable oil, then poured in tomato juice and simmered over low heat for another 10 minutes. After that, I added sour cream to the evaporated tomato-vegetable sauce and let it boil.

Placed the cooled pieces directly into the frying pan with the gravy. Use a spoon to pour a little gravy on top of the meatballs. Simmer them under a closed lid for 35 minutes over low heat. After 20 minutes I look in and, if necessary, add a little boiled water.

If you think that you can prepare a delicious meat dish only from pork or beef, then you are very mistaken. Meatballs, which are prepared using poultry meat, have a very delicate taste and will easily win the sympathy of your family members.

To feed a small family you will need:

  • minced chicken or turkey – 300 g;
  • carrots – 3 pcs.;
  • onions – 1 pc.;

Step two. I turn on the oven to warm up to 180C. I form medium-sized round pieces and immediately place them on a baking sheet. I bake them for 20 minutes, and during this time I prepare the filling.

I grate the carrots on a coarse grater and finely chop the onion. I lightly fry them in a frying pan with high sides and then put them through a blender. Add pasta, water, sugar and salt to the resulting mixture. I mix and send back to the stove to bring to a boil.

Unique meatballs in a frying pan without rice in sour cream sauce

For most housewives, the traditional part of the meatball recipe is rice. Although there are many recipes for preparing this dish without using it. Here is one of them.

To create very delicious dish you will need the following products:

  • 2 small onions;
  • carrot – 1 pc.;

Then I add a slice of bread softened in water, chopped herbs and garlic, onion, and carrots to the meat base. I add spices and salt.

I thoroughly mix the ingredients and form into pieces with wet hands. Before putting the meatballs in the pan, I dip them in flour. I fry the balls on both sides.

At the same time, I cut the onion into cereal pieces and grate the remaining carrots on a coarse grater. Then I fry them in a frying pan with high sides.

How to cook minced meatballs with rice and gravy in the oven - a simple step-by-step recipe

I picked up this wonderful recipe from a friend who works as a cook in a canteen. The main thing is that it is cooked entirely in the oven and does not require additional stewing in a pan.

To prepare this culinary, I’m not afraid of this word, “masterpiece” you will need:

  • minced meat – 700 g;
  • rice - half a glass;
  • chicken eggs – 2 pcs.;
  • one large onion;
  • salt, ground pepper;
  • tomato sauce – 3 tbsp. spoons;
  • sour cream – 3 tbsp. spoons;
  • flour – 1 tbsp. spoon;
  • water – 2 glasses.

Cooking step by step:

Step one. First of all, I boil the rice, drain any excess liquid, if there is any left after cooking, and set it aside. While the cereal is cooling, I peel the onion and chop it finely (you can grate it on a fine grater).

In a large bowl, mix the meat base of the dish with onions, spices and eggs. Then I add the cooled rice there and mix thoroughly again.

Step two. I form small balls from the resulting mass and place them on a baking sheet with high sides so that they do not touch.

Step three. Making gravy is very simple. Pour sifted flour into a bowl, then add sauce and sour cream on top. Beat everything in with a whisk until a homogeneous mass is obtained. Add water and stir again.

Step four. Pour the resulting sauce over our meatballs and place them in the oven for 45 minutes. Cover the top with foil.

These meatballs should be served in portions while piping hot. If I'm expecting guests, I put them in clay pots and sprinkle grated cheese on top.

Meatballs stewed in the oven, in my opinion, have a richer taste. Especially if they are drenched in sour cream sauce and topped with hard cheese.

Required set of products:

  • meat (preferably poultry) - 600 g;
  • rice - 0.5 tbsp;
  • hard cheese - 150 gr;
  • onion - 1;
  • egg - 2 pcs.;
  • garlic - 2 cloves;
  • sour cream - a glass;
  • flour - 70 g;
  • salt, spices.

Cooking process:

About 15 minutes before starting to prepare the dish, I boil the rice until half cooked and leave it to cool. I also make minced chicken legs. Having rid them of bones and skin, I grind them together with the onions in a meat grinder.

Place the minced meat in the bowl where the base of the dish will be prepared and beat in the egg. I mix everything well.

Next I add rice, salt and ground pepper. Mix thoroughly and taste. I make medium sized balls and roll them in flour.

I put a frying pan with vegetable oil on the stove and fry the pieces over high heat until a crust appears. Then I transfer it to a baking sheet. And turn on the oven so that it heats up to 180C.

To create a delicate sour cream sauce, I peel the garlic and pass a few cloves through a special press. I add salt, sour cream and a mixture of peppers to it and mix. It is better to take liquid sour cream, otherwise you will have to add water.

I pour the resulting sauce onto a baking sheet and bake for half an hour. Then I take them out, cover them with cheese and put them in the oven for another 10 minutes.

Before serving, you can decorate the dish with chopped herbs.

I don’t know about others, but I practically didn’t want to eat anything in kindergarten. My only favorite dish was the meatballs with gravy. I still remember their taste. I learned how to cook the same meatballs quite recently, and it turned out that there is nothing difficult in preparing them.

For their preparation the following products are required:

Cooking method:

First of all, I boil the rice in the proportion of 0.5 cups of rice cereal to two cups of water. I put the finished product in a colander to get rid of excess liquid.

I wash the pork, chop it and grind it into a large bowl. I do the same with onions. I add cooled rice, spices and egg to them. Mix everything very thoroughly so that all components are evenly distributed.

With wet hands I make round balls. Then I roll them in wheat flour and fry them in a frying pan on sunflower oil. They are fried on both sides.

For now, the point is, I dilute tomato paste in a glass of water and pour it with the resulting juice. Cover them with a lid and simmer for 10 minutes.

During this time, mix the flour with sour cream and water (about 0.5 cups). Add the resulting sauce to the meatballs and cook, covered, over moderate heat for another 12 minutes. A couple of minutes before the end, I add laurel leaves.

Tender meatballs with gravy in a slow cooker - step-by-step recipe

Of course, if the house has equipment such as a slow cooker, the stewing process will be much faster and less troublesome.

For cooking you will need:

  • minced meat (chicken) – 550 g;
  • rice – 150 g;
  • onions – 2 pcs.;
  • boiled water – 2 l;
  • carrots – 2 pcs.;
  • tomato paste – 80 ml;

  • sour cream – 25 ml;
  • salt, ground black pepper.

Cooking method:

I peel the garlic and onions, then chop them using a food processor. I peel the carrots, wash them and grate them on a coarse grater.

I pay special attention to rice, as it should turn out crumbly after cooking. Therefore, before cooking, I rinse it several times with cold water. I knead the minced meat and beat it on the table for about 10 minutes.

Pour a little vegetable oil into the multicooker bowl and lay out the vegetables for frying. I start the frying mode. And while stirring, I fry it just a little bit.

At the same time, I mix the minced meat with rice and spices and put them in the refrigerator for a while.

Meanwhile, I add tomato paste and sour cream to the fried vegetables. And I launch the “Quenching” program. After three minutes, I pour water over them and let them boil for 7 minutes with the lid open. At the end, salt the gravy and pour it into a separate container.

I rinse the bowl, lubricate it with fat and turn on the “Heating” mode. While it is warming up, I make small balls, each of which I roll in sifted flour.

I put the finished pieces in a bowl and cook on the “Roasting” program until a crust appears. Then add gravy and simmer for 35 minutes.

These delicious lumps can be prepared not only as a daily dish for dinner or lunch, but also as a full-fledged holiday dish. I often spoil my guests with meatballs prepared in a simple recipe.

Grocery list:

  • potatoes – 7 pcs. (take medium or small);
  • parsley and dill;
  • onion – 1 piece;
  • processed cheese – 100 grams;
  • cream 10% – 250 ml;
  • egg – 1 pc.;
  • vegetable oil – 2 tbsp. spoons;
  • bread crumbs - 1 tbsp. spoon;
  • paprika, pepper, salt.

Finely chop the peeled onion and greens. Then I mix the onion and some of the greens with minced meat, egg, breadcrumbs and spices. I knead thoroughly. I peel the potatoes, wash them and mix them with spices.

Then I take a heat-resistant pan and place the potatoes in the center, forming balls around them. Make the meatballs the same size as the vegetables, so their cooking time will coincide. And the dish will look very original.

I pour the cream into a bowl, then add the remaining herbs and half of the grated processed cheese on a coarse grater. I mix thoroughly and then pour the sauce into the mold, and send the dish to the oven to bake for half an hour.

Serve the meatballs straight from the oven, straight from the pan. Before serving, add the remaining cheese; the temperature will melt it.
