The recipe for chicken dumplings is based on minced chicken, which should be tender and flavored with a variety of spices. Minced chicken or beef can be called not only tasty, but also a healthy dietary product, since there are only 110 kcal in 100 grams of chicken fillet. Such a dish can be consumed by those who adhere to paragraphs.

You will need:

  • chicken fillet - 900 g;
  • boiled, cold water - 1 glass;
  • wheat flour of the highest grade - 500 g;
  • chicken eggs - 2 pcs.;
  • vegetable or olive oil - 1 tablespoon;
  • salt, pepper, garlic - to taste.

Cooking

  1. Dissolve the salt in a glass of chilled boiled water. Then mix salt water with fresh chicken eggs and a whisk in a separate bowl, beat everything.
  2. Sift the flour through a special sieve, you can use a colander with small holes.
  3. Pour the egg mixture into the carefully sifted and oxygenated flour through a funnel and mix until a homogeneous mass is formed.
  4. First, knead in a saucepan with a wooden spatula or spoon, and then with your hands already on the table, gradually mixing in the flour until a stiff dough is obtained. Sprinkle the result with flour, cover with a warm towel and leave in a dark place for about 25-30 minutes.
  5. Meanwhile, prepare fresh minced meat for chicken dumplings. Why finely chop the chicken fillet lengthwise and pass it and the onion through a meat grinder. Add salt to the minced meat, as well as black ground pepper and squeezed garlic.
  6. Take the finished dough, “knead” it to make it more elastic and divide it into an even number of equal parts, which you then roll into thin layers. But be careful not to tear the dough!
  7. Take a dumpling, grease it with vegetable or olive oil, and place the first rolled out layer of dough on it, carefully spreading it over its entire plane.
  8. With a teaspoon, carefully spread the minced chicken into the cells of the dumpling. Top with a second layer of dough. And roll with a rolling pin until the mini-patties separate from the mold. Do this with all layers of dumplings dough.

  • vegetable or olive oil - 3 tablespoons;
  • salt, pepper, garlic - to taste;
  • mustard - optional.

Cooking

  1. In the flour, sifted in advance and poured on the table in the form of a pea, add a pre-beaten egg and a little salt, then fresh milk, gradually mix everything. After kneading the dough and covering it, leave for about half an hour.
  2. Pass the chicken fillet through a meat grinder.
  3. To soften the mushrooms, soak them in water for a couple of minutes. Then fry in vegetable or olive oil with onions.
  4. Mix mushroom dressing with minced chicken, add salt and spices to taste and desire.
  5. Roll out the resulting dough into equal layers, spread one by one on a greased dumpling, and spread the minced meat with mushrooms and chicken into mini molds.
  6. Roll out the dough and take out the finished dumplings. Cook in boiling water for about 5-10 minutes, stirring occasionally.

  • chicken fillet - 500 g;

  • rye or wheat flour - 1 cup;

  • fresh chicken egg - 1 pc.;
  • butter, pre-melted - 50 g;
  • salt, pepper, garlic, turmeric - to taste.

Cooking

  1. Sift the flour and beat one egg into it, then pour in the kefir. Punch down the dough and let it rest for about 30 minutes.
  2. Through a meat grinder, scroll the chicken fillet with onions and white cabbage. Add salt, spices and a little butter, melted in advance. Turmeric can be added if desired. Mix everything.
  3. Roll out the correct dough and use a greased dumpling pan to create chicken and cabbage dumplings.

  • chicken fillet - 500 g;
  • boiled potatoes, small - 5 pcs.;
  • wheat or rye flour - 1 cup;
  • fresh chicken egg - 1 pc.;
  • onion - 2 medium heads;

  • salt, ground black pepper, garlic - to taste;

Cooking

  1. Cut and beat boiled potatoes in a mixer. Add egg and spices of your choice to beaten potatoes. Then gradually add the flour sifted in advance until you get a dough that does not stick to your hands. Leave the dough covered with a towel for 25 minutes.

Recipe

  1. Knead the dough. In the sifted flour, add cold boiled water, 2 teaspoons of salt, an egg and knead everything well. At the end of the kneading, add vegetable oil to the dough. Let the dough infuse for swelling of the gluten. And we'll take care of the filling.
  2. In order not to doubt the quality of minced meat and the taste of ready-made dumplings, it is better to cook it yourself. To do this, cut the chilled chicken into pieces, separating the meat from the bones and twist in a meat grinder. Together with chicken meat, twist two large onions. Salt and pepper minced meat to taste.
  3. More than twenty minutes have passed since the test was kneaded. You can start making dumplings. Roll out the dough into a thin layer about 1 mm thick. Cut out circles with a diameter of 3 cm with a round stack or mold. Apply with a teaspoon, about 1/3 of a spoon for each circle. Pinch like a dumpling, connecting its ends together.
  4. Boil dumplings in chicken broth or plain salted water. From the indicated amount of products, about 450 dumplings should be obtained. If you are not expecting guests, half or even most of the dumplings can be frozen and cooked as needed.
  5. Dumplings are served with sour cream without broth or filled with broth in which they were cooked, sprinkled with finely chopped herbs.

With milk and kefir, the dumpling dough recipe turns out to be more tender, so minced meat can be combined with various vegetables and even fish dumplings can be made.

Recipe

  1. Add an egg to the sifted flour, pour in kefir, salt with a teaspoon of salt. Knead a tight dough. After covering the dough, leave it for the gluten to swell.
  2. Twist the chicken fillet in a meat grinder. Do the same with onions.
  3. Chop the cabbage very finely, then cut it crosswise into small pieces. If it doesn’t work out, you can twist it in a meat grinder, but then a lot of juice will stand out. Salt and pepper the mince to taste.
  4. Roll out the dough thinly, cut out circles with a notch and spread the minced meat over them, pinch, giving the shape of a dumpling.
  5. Put in boiling salted water and cook until tender for five or ten minutes.
  6. Serve hot with your favorite sauce, sprinkled with herbs.

Recipe for dumplings with chicken and mushrooms

I confess that I cooked dumplings with chicken for the first time, and they turned out incredibly tender, tasty and juicy, and also beautiful. I liked the recipe for dumplings with minced chicken so much that it is simply beyond words. Of course, as with any dumplings, I had to tinker with their modeling. But the taste of dumplings with chicken is in no way inferior to classic dumplings, and maybe even superior.

Due to the fact that a lot of onions (necessarily very finely chopped) and sour cream are added to minced chicken, the filling of dumplings with chicken turns out to be very juicy and rich. I prepare the dough for dumplings according to a proven recipe, which I have already talked about. It turns out very gentle, not tight, and it is a pleasure to work with it.

You can cook minced meat for dumplings with chicken yourself or use ready-made purchased ones, here the choice depends only on your preferences. I used minced chicken breast for this recipe, I like it better. From the declared amount of ingredients, I got an impressive amount of dumplings with minced chicken, which is enough to feed a family of four at least three times.

Ingredients:

  • 800 g minced chicken
  • 1 large onion or 2 medium
  • 5 tablespoons sour cream
  • 250 ml milk
  • 400 g flour
  • 1 tsp salt in the dough (without a slide) + 0.5 tbsp. l. in minced meat
  • 0.3 tsp ground pepper

Dumpling dough is very easy to prepare and requires a minimum of ingredients. In a bowl, mix 400 g of flour and 250 ml of cold milk. Add a teaspoon of salt, but without a slide. First, with a spoon, and then with your hands, knead a homogeneous dough. You won’t need to add more flour, except to sprinkle the work surface when rolling out the dough, but that will be later. In order for the dough to acquire a uniform structure, it should be vigorously kneaded and rolled on the table for at least 3-4 minutes. And in the end you will get a beautiful smooth ball.


But the dough is not yet ready to be molded. He needs a little time to acquire greater plasticity. Put the ball of dough in a bag, close tightly and leave at room temperature for 15 minutes.


In the meantime, prepare the minced chicken for dumplings. Peel the onion and chop finely. For convenience, you can use a blender. My blender did an excellent job of chopping the onion into small pieces in 30 seconds.


Add onion, 5 tablespoons of sour cream, half a tablespoon of salt and a third of a teaspoon of ground pepper to the minced chicken.


We knead the mince with our hands. Knead the minced chicken for 2-3 minutes, after which it becomes homogeneous and keeps its shape perfectly.


Let's get back to the test for future chicken dumplings. Take it out of the bag and cut it into 4 pieces. Let's deal with the first part for now, and return the rest to the package.

Roll out the dough on a lightly floured work surface. The thickness of the dough is 2 mm. Cut out circles using a glass. The dough remaining after cutting out the circles is collected in a pile and sent to the bag for the rest of the dough.

In the center of each circle we put an incomplete teaspoon of minced chicken. We make dumplings and put them on a board powdered with flour.

After the board overflows with dumplings, I send it to the freezer, where the chicken dumplings freeze safely. And for the new batch I find another board or dish, and so on in a circle.


As a result, an impressive bag of homemade dumplings is formed in the freezer.


Well, why not try freshly made dumplings with minced chicken? Bring water to a boil, adding 0.5 teaspoon of salt to it, and send dumplings to boiling water (immediately mix them with a spoon, otherwise they will stick to the pan). We expect the water to boil again and count 7 minutes. All! Chicken dumplings are ready!

Dumplings will become even tastier if you experiment with the filling. Chicken fillet is a very tender meat, which, in combination with a properly prepared dough, will have a unique taste. The main thing is to add the right ingredients to the minced meat so that the meat retains its best qualities. This recipe was created for those who are watching their figure or are on a diet. Low-calorie dumplings will not just delicious dish for lunch, but also help to keep the figure (almost any diet). They are also suitable for children. So, from the ingredients you will need:

  • minced chicken or chopped fillet;
  • 1 onion;
  • salt to taste;
  • ground pepper, coriander (optional).

These components are necessary for the filling. It is important to prepare the flour base tender, which will melt in your mouth. We take standard products:

  • 2 chicken eggs;
  • 1 glass of cold water;
  • 4-5 glasses of flour;

  • 350-400 gr. minced chicken;
  • 500 g fillet or minced turkey;

For test:

  • 400-450 g flour;
  • 1 egg;
  • 200 ml of water;
  • half a teaspoon of salt, you can pepper to taste.

Step by step preparation:

  1. Sift flour. Make a hole in it, into which pour the beaten egg with salt and water.
  2. Knead the dough to the consistency of plasticine. After kneading, wrap the dough with a towel or polyethylene. Let stand for 20 minutes.
  3. Prepare shredded filling. Mix 2 types of meat.
  4. Salt the meat, add salt, pepper and finely chopped onion.
  5. Divide the dough into three equal parts, each of which is thinly rolled out and sprinkled with flour so that it does not stick to the table.
  6. Spread the filling over the rolled pieces. Roll the sheets into a tube.

  • Harmful. In fact, dumplings are one of the most balanced dishes, containing the entire set of necessary substances. Besides, have you seen a person who would eat dumplings with bread? I - no, which means you can avoid eating extra carbohydrates. And, of course, you don’t need to fill the product with mayonnaise, sour cream or, God forbid, ketchup;
  • For a long time. “Having stuffed your hand" You can give out the n-th number of dumplings faster than the same amount of the notorious (aspirated) borscht. Still: the meat is cooked as much as it is cooked, and without special devices it will not be possible to speed up the process, and in the case of dumplings, everything is in your hands;
  • Difficult. This, unfortunately, is the truth. It's not even about some particular complexity, but about the amount of labor costs. If the same borsch requires only episodic intervention in the form of laying food and cooking frying, then dumplings are the work of the hostess from beginning to end. Once upon a time, in large Siberian families, the entire female livestock made dumplings for days, preparing the product for the winter. In conditions of steady cold winter the freezing attic became a natural freezer, which made it possible to twist a whole pig, or even more than one, into canned dumplings. Well, you are unlikely to have more than one or two pairs of hands at your disposal, so you will have to tinker. On the other hand, why not sometimes treat yourself to your beloved and your loved ones with homemade dumplings, in fact, how can you scare our woman, hardened in many hours of chopping New Year's salads. Of course, you can cook “lazy” dumplings with minced meat or vegetables, but, as practice shows, it doesn’t come out faster or easier. A coward doesn't play hockey, and lazy people don't make dumplings.

So, it’s decided, we’re preparing “ bread ears" (this is how "pelnyan" is translated from Finnish). It remains to choose the filling, fortunately, there is plenty to choose from: the filling is prepared from any meat, poultry, fish and even vegetables, such as cabbage or radish.

The main condition is that the products must fall into the dough raw. This is the difference from dumplings with meat or cabbage - the filling of dumplings undergoes preliminary heat treatment.

We offer you to cook dumplings from minced chicken. Firstly, it is cheaper than pork, beef or even minced fish; secondly, the dish will turn out to be almost dietary.

Dough

We start the cooking process with the dough: it is better that the dough stands a little before starting to mold.

There are two approaches to making dough:

There is no fundamental difference between the methods, but the second option is more familiar to me, so I’ll tell you about it. But first, a few words about eggs.

There are directly opposite opinions on this matter: some make dough without eggs at all, on water alone, while others use only eggs as a basis. To me, the option without eggs seems too slimy in boiled form, and it’s inconvenient to work with such. This is of course a matter of personal preference though.

As for the test on eggs alone, I do not see any special advantages in it, so there is no reason not to save money.

Go:

  1. We take 4-5 eggs per kilogram of meat and beat well with a generous pinch of salt;
  2. In the resulting mass, add the same amount of water and mix;
  3. Add flour in 3-4 tablespoons and stir. It’s not worth bothering with the complete kneading of lumps: in the end, everything will mix up, be sure;
  4. When it becomes difficult to interfere, dump the contents onto a floured board and knead until cooked.

How do you know when the dough is ready? First, the dough should not be visibly wet. Secondly, try to tear off a piece from the dough mass, the dough should stretch well, and not come off immediately. We put it in the refrigerator and proceed to the preparation of the filling.

Filling

Many young housewives make the mistake of trying to cook minced meat from meat alone, and then they are surprised that their cutlets or dumplings from pure veal tenderloin are dry, tasteless and “rubber”. The meat in the filling is the main thing, but additional ingredients give the real taste. And for chicken meat, this is doubly true, because it itself is quite bland.

The basis of the filling will be chicken fillet, which is easy to purchase at any supermarket, and to make the filling juicy and tasty, take more onions - 3-4 large onions per kilogram of meat. Garlic, one head per kilogram, also does not hurt. Salt and pepper to taste. Some people add cabbage instead of onions to minced dumplings.

Tip: Add sugar to the meat, a couple of teaspoons per kilo, the result will not disappoint you.
