In our country, even in ancient times, a housewife was assessed by her ability to make dough and bake pies. Meat pies - food preparation

Any meat is suitable for pies, always without bones: beef, pork, any poultry, as well as offal or leftover boiled meat. The most important thing is to shape the minced meat so that it is not too wet, otherwise when frying or baking there may be a damp layer of dough around the filling. But too dry dough will make the pies difficult to digest. So, we get the correct consistency by performing all the technologies. And, of course, flour for pies must be of the highest grade.

Meat pies - the best recipes

Recipe 1: White pie dough with baking soda or baking powder

Belyashi are pies with meat (beef or lamb), which are fried from yeast dough. But if you want to cook them much faster, try quick-ripening soda dough. With sour cream it turns out very soft and tender, and the time spent on its preparation is much less. This amount of dough should yield approximately 20 whites.

Ingredients:

Dough: flour (half a kilogram), sour cream (1 cup), egg (1 pc), soda (one-third of a teaspoon), salt.

Filling: fatty beef or lamb (400 grams), onions (2-3 pcs.), salt, ground pepper, cumin.

Cooking method

Mix finely chopped onion with ground meat, add pepper and salt. Add a little water - the filling should not be too dry. The pie dough should be soft and not stick to your hands. To prevent carbon dioxide formed during the reaction of soda and acid from evaporating, knead the dough quickly. Mix the ingredients and immediately start cutting. Roll half the dough into a rope and divide the sausage into 10 equal parts. Roll each part into a flat cake 0.5 cm thick. Place a tablespoon of minced meat in the middle and connect the edges to the center. Leave a small hole in the middle. Place the belyashi on the frying pan with the hole facing down. For frying, take a mixture of vegetable and melted butter. Serve rosy hot pies with hot tea or broth.

Recipe 2: Pies baked from rich yeast dough

An excellent recipe for a substantial portion of meat pies. We use raw minced meat and the usual technology for preparing yeast straight dough.

Ingredients: wheat flour (470-780 gr.), butter (65 gr.), salt, sugar (2 tablespoons), pressed yeast, ground black pepper, eggs (3 pcs.), milk 100 grams.

Cooking method

Let's prepare a rich yeast dough. We dilute the yeast in warm water with milk, add the dissolved butter, and leave for 15 minutes. Use a deep bowl to mix eggs, butter, milk. Mix all the ingredients and add flour little by little. Knead for about 15-20 minutes, in a food processor for 8 minutes. The dough should be soft, slightly sticky to your hands. Sprinkle it with flour and leave it to rise for an hour and a half, during which time it will double in size.

Cut out circles of the required diameter from the rolled out cakes and place the filling on the surface. Place the finished pies on a baking sheet at a distance of 3-4 cm from each other, leave to “proof” for 15-20 minutes. Brush each pie with beaten egg and place in the oven. Bake at 200 degrees. In 15 minutes, a whole baking sheet of ruddy, soft and breathtakingly tasty meat pies awaits you.

Recipe 3: Snack Meat Pies

There is absolutely no need to fuss with the dough in this recipe. We use ready-made waffle cakes, and at the same time we will be able to surprise guests with our skill.

Ingredients: ready-made waffle cake (2 pcs), minced meat (half a kilogram), onion (1 pc), eggs (2-3 pcs), ground pepper, salt, oil for frying.

Cooking method

Let's pass the minced meat through a meat grinder, mix it with onions, peppers, a small amount of water and fry in a frying pan until half cooked. Place the minced meat on a waffle crust and cover with another one. After three minutes, cut into squares with a side of 5 cm. Beat the eggs in a cup and add some salt. Dip each pie in the egg mixture and fry in oil. Savory snack pies will be a great addition to any table, even a holiday one!

Recipe 4: Meat pies from ready-made puff pastry

This is perhaps the simplest dish for lazy people or busy ladies. If you still have to feed your family, and you yourself love to eat well, this recipe is for you! Puff pastry is very finicky to prepare, so we’ll use a ready-made store-bought version. For the filling, meat from the legs with the addition of various spices is suitable (just don’t overdo it).

Ingredients: puff pastry (1 kg), chicken legs (2 pcs.), onions (1-2 pcs.), parsley, sour cream (100-150 g.), cumin, salt, pepper, 1 egg.

Cooking method

Finely chop the meat, parsley and onion, mix, pepper and salt, add a pinch of cumin. Cut the dough squares into triangles diagonally, put the filling in the middle and a teaspoon of sour cream on top. Fold the long side in half and pinch the edges. Make sure that the filling juice does not leak out. Brush the finished puff pastries with beaten egg and place in the oven for 25 minutes at 220 degrees.

Recipe 5: Potato pies with meat

These pies are made from a special dough. Essentially these are potato zrazy with meat. The best combination would be potatoes and beef. Cooking them is not at all difficult, the whole problem is to boil the meat to obtain the filling.

Ingredients: veal (100 grams), potatoes (3 pcs), garlic, carrots (1 pc), parsley, vegetable oil for frying, allspice, salt, pepper.

Cooking method

Filling: put vegetables in a pan - potatoes, onions, carrots, add veal and spices. Boil until done. Pass the meat, onions and carrots separately through a meat grinder and mix well.
Dough: mash potatoes, add salt. We form a thick flat cake from the mass, put a spoonful of minced meat in the middle, and cover it with the same flat cake on top. Roll the potato pie in flour and fry in vegetable oil. Soft zrazy are similar to pies, but softer and have a slightly different potato taste. Try them and your whole family will fall in love with them too.

— To make lean minced meat more rich, you can enhance its taste with a bouillon cube. Dissolve the cube in a small amount of water and pour into the minced meat; the filling will be not only richer, but also juicier.

— Boiled beef is often used for the filling. To make it soft and tender, you can wipe a raw piece of meat with dry mustard in advance (for example, the night before). Before boiling or frying, rinse the meat under the tap.

As you have already noticed, baked pies need a filling of boiled meat. The pies that we will talk about now are fried in oil and are called belyashi.

They have a hole in the top, where meat broth or water can be added if necessary. Thus, the filling becomes juicy and the pies taste better.

List of ingredients: one egg; 50 g butter or butter margarine; 550 ml low-fat milk; 35 g pressed yeast; 650 g flour; half a kilogram of minced meat; a bunch of fresh herbs; seasonings and salt to taste; vegetable oil for frying.

Cooking steps:

  1. Melt the butter and heat the milk.
  2. Crumble the yeast with your hands and stir in warm milk.
  3. Pour in oil and salt.
  4. Add flour gradually, stirring the dough thoroughly with a spatula each time.
  5. When the mass becomes elastic enough, place it on the work surface and knead with your hands.
  6. Cover the dough with a bowl to prevent it from drying out and let it rest for 30 minutes.
  7. Cut the meat into pieces and grind in a meat grinder.
  8. Salt the minced meat to taste, add chopped herbs, ground black pepper and other seasonings you like.
  9. If the minced meat is too crumbly, combine the ingredients by adding a couple of tablespoons of warm water or milk.

The pies that you will learn to cook retain freshness for a long time, like other baked goods mixed with sour cream or other fermented milk products.

The pies will serve as an excellent snack or become a separate dish, thanks to the hearty meat filling.

100 g mayonnaise; 200 g sour cream; 400 g flour; one egg; salt; half a teaspoon of soda; onion; 450 g minced meat; seasonings; 100 ml vegetable oil.

Preparation:

  1. Peel the onion and cut into half rings.
  2. Fry until translucent, then add minced meat.
  3. Keep the pan over medium heat for 20 minutes, stirring the contents constantly.

These leavening agents work much faster, so you won't have to wait until the weekend to prepare a delicious treat.

The amount of ingredients required by the recipes is enough for 20 whites.

This is: a glass of sour cream; half a kilogram of flour; egg; salt to taste; 1/3 teaspoon of soda.
Filling: 400 g meat; salt and seasonings; 3 medium sized onions.

Prepare the pies according to the instructions:

  1. First, finely chop the onion and mix it with the meat minced in a meat grinder.
  2. Season the minced meat with salt and pepper, and to prevent it from being too dry, add a little water.
  3. Knead the dough, which can be immediately cut and sculpted into pies.

A somewhat original taste is obtained from meat pies made from potato dough. By using your imagination and being creative, you will get delicious pies that your guests will happily devour on both cheeks.

So, take: 2 eggs; 6 potatoes; 4 tbsp. spoons of white flour; salt; 60 ml of vegetable oil without aroma; 450 g chicken breast; dill greens; onion; spices.

Step-by-step preparation of the dish consists of mixing the base and preparing the filling:

  1. First, peel the potatoes and boil them in salted water.
  2. Remove the finished potatoes from the boiling water and mash with a masher to obtain a homogeneous puree.
  3. When the puree has cooled, add the egg, flour and knead into a soft, flexible dough.
  4. Boil the chicken breast in water for 20 minutes, then cool and grind through a meat grinder along with the onion.
  5. Place the filling in a frying pan and fry in vegetable oil.
  6. Form the pies. To do this, scoop up the potato dough with a spoon and spread the flatbread on your palm (see photo). Place the minced meat in the center, form a pie and fry in a frying pan.

Puff pastries are prepared using a simplified technology. This means that you do not need to knead the base, where margarine is chopped with flour into fine crumbs and then ground with the rest of the ingredients.

However, everything is in order, and first you need to prepare the necessary products:

a pack of margarine; 0.6 kg flour; 2 eggs; 0.2 liters of milk; 450 g minced beef; bulb; 20 g each of vegetable and butter; salt to taste.

Now knead the dough:

  1. Melt the margarine and heat the milk.
  2. Mix these two ingredients and pour into a bowl where the wheat flour has been sifted.
  3. Salt the mixture and knead first with a spoon, then with your hands.
  4. Wrap the resulting elastic mass with film and send it to a cool place for half an hour.

Make the filling:

  1. Clean the meat from veins and films.
  2. Cut into pieces and grind in a meat grinder along with the onion.

  1. Knead the yeast dough using a straight method and leave to rise for an hour and a half in a warm place without drafts.
  2. When the time comes, place the dough on the table and divide it into parts, from which you then form round pieces.
  3. Make oven pies with meat and place them on a baking sheet, spacing 3 cm from each other.
  4. In order for the meat pies to bake well in the oven, preheat the oven to 200 degrees and keep them there for 15 minutes.

Kneading and proofing yeast dough, preparing the filling, modeling and baking pies is a labor-intensive and lengthy process. But the game is worth the candle. You only need to cook these pies once or twice, and you will be able to bake them without tips or recipes. Our dough will be prepared in water. In the meantime, we will make a delicious filling. So let's get started.

Ingredients:

  • a quarter liter of water;
  • 10 g dry yeast;
  • two tablespoons of sugar;
  • one teaspoon of salt;
  • 3 tbsp grow refiner oil;
  • chicken egg;
  • 4 cups flour.

For filling:

  • three hundred grams of beef;
  • four onions;
  • chicken egg;
  • 10 g salt;
  • 5 g crushed black pepper;
  • 2 tbsp vegetable oil.

Step-by-step recipe for meat pies made from yeast dough

It’s worth starting with an important point - the water for kneading the dough should be warm, a little more than room temperature.

Add dry yeast, granulated sugar and salt into it. Stir until the yeast dissolves.

Once everything has dissolved, add the chicken egg and refined oil. Stir a little so that the egg is distributed throughout the mixture.

Sift half of all the flour and add in small portions, constantly stirring the dough with a mixer.

Now sift and also add the rest of the flour a little at a time, kneading the mass with a mixer.

Now you need to work with your hands - knead, patting, bringing it to the desired consistency. Shape the dough into an oval shape directly in the bowl, cover with a towel and place in a warm place.

For the filling you need to boil the beef. Take boneless meat. You can cut it into two or three large pieces.

Cook until done, about one and a half to two hours.

Then we pass the beef through a meat grinder.

Peel four onions, finely chop and fry until golden brown in vegetable oil.

Do not overcook, the onion should not burn.

Salt it, add pepper and stir.

Mix the beef minced through a meat grinder and the fried onion. The filling is ready.

The dough should rise while we cook the meat. It just takes about two hours.

You can give the pies any shape you want. Let's try to make round portions.

Line a baking sheet with parchment. Divide the dough ball into equal balls and place them on a baking sheet. This will make it more convenient to calculate the amount of filling according to the number of balls.

Pour a little flour onto a cutting board and knead the ball with your hands until it forms a small cake. You can roll it out a little with a rolling pin.

Place a spoonful of filling in the middle and secure the edges of the flatbread. To make the pie round, first take the opposite edges, fasten them, then the other. In the end we ended up with a nice little knot.

We pinch it well so that it does not open. Place each knot on a baking sheet lined with parchment, knot side down. Do not press with your hands.

In the same way, make all the pies with meat filling.

Now let's proof the dough. Preheat the oven to 100 C, place a baking sheet in it, and do not close the door completely.

Or you can place the baking sheet in a warm place. The pies need to expand and rise along with the filling.

Break the egg, stir and brush the pies. If desired, you can sprinkle with sesame or poppy seeds.

Now increase the temperature to 180 C and bake for twenty minutes.

It happens that the decision to bake pies comes unexpectedly, and there is no time to fully prepare the dough and filling. There is a solution - ready-made yeast dough and minced meat. This time we use pork meat. And add rice and carrots to the filling. You will get delicious and satisfying pies.

Ingredients:

  • yeast dough - 1 kg;
  • minced pork - 600 gr;
  • onion - two hundred grams;
  • carrots - two hundred grams;
  • long grain rice - 100 g;
  • grows refiner oil - 100 ml;
  • milk - 1 tbsp;
  • chicken egg - 1 piece;
  • salt - 1/2 teaspoon;
  • Grind black pepper - 1 pinch.

How to quickly make meat pies from yeast dough

Wash long grain and steamed rice, boil until done.

Remove the dough from the packaging and defrost. If the dough is not frozen, simply place it in a warm place.

Chop the onion, grate the carrots and fry until soft.

Fry the minced meat in the same oil with the addition of salt and pepper.

When all the ingredients for the filling are ready, cool them and mix them in a bowl.

We make small portioned koloboks from the finished filling.

Divide the dough into pieces, form a ball from each, make a flat cake out of it, rolling it out a little with a rolling pin.

Place a ball of filling in each one. And we form a beautiful, neat pie. It can be a traditional oval shape.

Seal the edges and place on a baking sheet lined with parchment. We make the rest of the pies in the same way.

Place in a warm place and let the pies rise. Twenty minutes is enough.

Bake in an oven preheated to 190 C for half an hour.

If desired, brush each pie with beaten egg. This way they will turn out more rosy and appetizing.

Option 3: Yeast pies with meat on kefir

You can prepare the dough not only with water, but also with any fermented milk product. We will have kefir. And we’ll make the filling from pork and onions with spices.

Ingredients:

  • three hundred ml of kefir;
  • chicken eggs - 2 pcs;
  • grows refiner oil - 150 ml;
  • dry yeast - 11 g;
  • milk - one hundred ml;
  • one and a half tablespoons of sugar;
  • one and a half teaspoons of salt;
  • five hundred grams of 1st grade wheat flour.

For filling:

  • three hundred grams of boneless pork;
  • large onion - 1 piece;
  • teaspoon salt;
  • half a teaspoon chopped black pepper.
  • For lubrication:
  • raw chicken yolk - 1 piece;
  • two tbsp milk.

Step by step recipe

Pour milk into a saucepan, heat, but do not boil. The milk should not be hot. When warm, turn off the heat and add the yeast and sugar.

Stir and let the yeast react - leave for half an hour. Avoid placing in a draft; a bathroom is best.

Heat kefir and pour vegetable oil into it, beat in chicken eggs and stir.

As soon as you saw that bubbles began to appear on the dough, it increased in size - pour in kefir. Mix everything again.

Add sifted flour in small portions, kneading the dough. It should be soft, not very sticky.

Note: If you add all the flour at once, the dough will become too dense, and the finished pies will lose their fluffiness and airiness.

Cover the finished dough with a towel and put it in a warm place for an hour.

First you need to boil the pork, then cut it into pieces and put it through a blender.

Fry the onion in oil, add to the blender bowl and stir again with salt and black pepper.

To prevent the dough from sticking to your hands, grease them with a small amount of vegetable oil. Take the required amount for the pie, form a ball, and then make a cake directly with your hands.

Place the filling in the middle and seal the edges. So, the first pie is ready. Do the rest and place on a parchment-lined baking sheet.

If you don't have baking paper, grease the pan with butter.

Break the egg, separate the yolk, mix it with two tablespoons of milk. Lubricate the pies with the resulting mixture.

Bake at 180 C for half an hour. Once the pies are nicely browned, they are ready.

It is better to transfer the finished baked goods from the baking sheet into a basket or onto a cutting board - this way the lower part will not steam or become soggy. And if you cover them with a towel, the golden brown crust will become softer.

Option 4: Juicy yeast pies with beef on the bone

The preparation of pies is divided into several stages. Since we will add a little broth from boiled beef to the filling, the finished baked goods will turn out juicy and appetizing. Prepare the dough in milk using dry instant yeast.

Ingredients:

  • seven hundred grams of beef on the bones;
  • one hundred ml of broth;
  • seven hundred grams of wheat flour;
  • a third of a liter of milk;
  • a tablespoon of sugar;
  • chicken egg;
  • ten grams of dry yeast;
  • teaspoon salt;
  • one hundred grams of plum butter;
  • one hundred grams of onions;
  • 2 tbsp vegetable oil.

How to cook

If you use instant yeast, it is better to first mix it with the sifted flour. But if you are not sure about their quality, pour them into warm milk, add sugar and stir.

When the mass begins to foam, you can add melted butter and salt. Everything is mixed, and then flour is added and the dough is kneaded.

Place the dough in a large bowl and cover with a towel or cling film. It should stand in a warm place for one to two hours. It should double in size.

Then knead it lightly with your hands and let it rise again.

Just as the dough arrives, we will prepare the filling. Boil beef on the bone over medium heat. Approximate cooking time is 1.5 hours.

Don't throw out the broth - it will come in handy later.

Trim the flesh around the bones and puree in a blender. Add the fried onion, salt and pepper.

  • a quarter liter of warm water;
  • 4 tbsp flour;
  • chicken egg;
  • 3 tbsp vegetable oil;
  • 2 teaspoons dry yeast;
  • 2 tbsp sugar;
  • teaspoon salt;
  • three hundred grams of homemade minced meat;
  • bulb;
  • greens to taste;
  • teaspoon salt;
  • 1/2 teaspoon crushed black pepper.

Step by step recipe

Pour warm water into a large bowl. Pour in yeast, granulated sugar and salt. Stir with a whisk.

Beat in the egg and pour in the oil. Whisk again.

Add flour in small batches, kneading the dough. Then, with your hands, slapping the mass, bring the dough to the surface for ten minutes.

Cover with a towel and leave in a warm place for two hours.

For the filling, start frying the chopped onion, and then add the minced meat. Fry until golden brown. Add salt, pepper and stir.

If you decide to add greens, chop them and add them to the finished filling. Stir again.

Divide the dough into portioned balls, form each into a flat cake with your hands, and place the filling in the center.

Seal the knot tightly and place each pie, seam side down, on a baking sheet lined with parchment.

Let the pies rise for twenty minutes, then brush with egg and bake for twenty minutes at 180 C.

A good memory from childhood is my mother’s or grandmother’s pies. The time has come for you to learn how to bake such things so that your children and then your grandchildren will remember them.

Recipe: Meat pies baked in the oven

Ingredients:

  • 3 tbsp. flour
  • 1 tbsp. milk
  • 2 tbsp. l. vegetable oil
  • 1.5 tbsp. l. Sahara

  • 100 gr. butter
  • 1 tbsp. kefir
  • a pinch of salt

For filling:

  • 300 gr. chicken fillet
  • onion
  • vegetable oil
  • pepper

Cooking method:

  1. Beat the egg with salt.
  2. Pour in kefir and melted butter.
  3. Knead the dough.
  4. Roll the dough into a ball, wrap it in cling film and put it in the refrigerator.
  5. Pass the chicken fillet and onions through a meat grinder.
  6. Fry the minced chicken in vegetable oil for 2-5 minutes.
  7. Salt and pepper the finished filling and knead thoroughly.
  8. Remove the dough from the refrigerator and the film. Divide the dough into balls.
  9. Roll out the balls slightly, but not thinly. Place the filling on the rolled out dough.
  10. Pinch the edges of the dough and shape them into pies.

Since meat pies cook very quickly, you need to take care of the filling in advance. This is because by the time the pies are formed, it should not be raw and already cooled down, if it was previously subjected to heat treatment.

By the way, I would like to say right away that these pies can be made with any filling. And sweet - for example, apples with raisins or thick jam... And vegetable - stewed cabbage with green onions and eggs, for example... And with smoked chicken - very tasty... and with boiled meat, of course, my favorite ones - these are the ones I prepared today.

I cooked beef the day before. The meat must be chopped in any way - minced through a meat grinder or, even easier, using a blender.
Peel the onion and chop it into small cubes.


Fry the chopped onion over preheated water until softened and golden brown.
Then add the chopped meat and mix. For juiciness, add the broth left over from cooking the meat - a little at a time, not all at once. The filling should not be dry, but not liquid either; in general, in the end I would like to get a rather juicy filling - as the main flavoring ingredient. Be sure to taste it and, if necessary, pepper and add salt; if you want, you can add other spices to your taste and dried herbs. Let everything simmer a little more until all the flavors combine and leave aside to cool.


Now let's prepare the dough. Let's start by lightly breaking the eggs with sugar and salt with a whisk.
In a separate bowl, first quench the soda with sour cream, and then mix it with the egg mixture.



Now add flour and knead soft and easy-to-work dough for pies.


Divide the dough into equal pieces.
Adding additional flour if necessary, stretch (flatten) each piece of dough with your fingers into a thin flat cake... Of course, you can roll it out with a rolling pin, but I like it this way, the old-fashioned way.
Place a tablespoon of meat filling in the center of each flatbread and make meat pies, pinching the edges well (like dumplings).
