  • One small onion.

Preparation

    Wash and dry the chicken, cut off the coccygeal gland. We close the hole at the neck with toothpicks - due to this simple procedure, steam will not escape from the carcass during baking.

    In order for chicken baked in a jar to be aromatic and tasty, it must be seasoned in spices. For the marinade, I combined in a bowl: soy sauce (it will replace salt), vegetable oil, a mixture of ground peppers, a little hot chili, turmeric and sweet ground paprika. Mix everything until smooth - you should get about 3 full tablespoons. I did not add salt to the marinade, however, if your soy sauce is not too “strong”, you can add a little salt, 1-2 pinches is enough.

    I rubbed the chicken with the aromatic marinade inside and out (it’s better to wear gloves, as turmeric stains your hands). Cover the bowl with cling film and leave to marinate at room temperature for 1 hour. During this time, the chicken will be salted and saturated with the aromas of spices.

    I poured boiling water into a jar of a suitable size (to avoid bursting, heat it slowly), filling it 2/3 of the volume. I added bay leaf, black and allspice peas, and coriander seeds to the jar.

    I placed the marinated chicken on a jar - the structure must be stable! You need to place a small baking sheet, some kind of mold or frying pan under the bottom so that all the fat and juices drain into the pan during baking. I also poured hot water into the pan. To prevent the outer phalanges of the wings from burning, I wrapped them in foil.

    Carefully transferred the structure to the oven, preheated to 180-190 degrees. The chicken in the jar should be baked for 60-80 minutes, it should be cooked and covered with a crust.
